We prepare Czech cuisine, because it’s what we know best.

Every course on our menu has its own origin story. In our childhoods, in local history or in the landscape around us. We cook using what’s in season, what’s being harvested in the fields, and what’s caught in the forest or the pond. When nature is in harmony, the food is too.

He has led the kitchen at La Degustation since the very beginning, and today shapes its direction as chef patron. Together with his team, he explores where Czech cuisine comes from and where it can go next. He plays the same role at our sister restaurant, Marie B.

Here and now. At Marie B, we let Czech cuisine live in the present moment. The menu is created anew every day, shaped by the season, the ingredients, and by what simply feels right.

Seasonality is a rule of nature – and the kitchen honours it.

“We believe that the most natural way to cook is to use what grows and thrives around us.”

Knowing how to cook also means knowing how to source. We visit the people who grow vegetables, make cheese, catch fish or raise animals. That’s why ninety-nine percent of our ingredients come from within 250 kilometres of Haštalské Square.
